The study of “vines to wine” in Cal Poly’s Wine and Viticulture program will create a partnership with local industry to deliver a true hands-on learning environment in this new multipurpose center.
The new Center for Wine and Viticulture will be completed in time for the fall crush of 2019. It will boost Cal Poly and the College of Agriculture, Food and Environmental Sciences into a leading edge program that prepares students for the cultivation, production and sale of wine. The multi-building complex will include a full working winery, a wine learning center and a future brewery/distillery.
EXPERIENCE A WORKING WINERY
The 15,000 square foot Winery Building will be utilized to produce both student and commercial wines, with an anticipated volume of 5,000 cases per year. Many of the grapes will be cultivated by students at Cal Poly’s own vineyards adjacent to the new Winery. The facility will include a crush pad, fermenters, barrel rooms, bottling room and a research lab that may be used for graduate students and senior projects. The site and Winery are developed with a variety of sustainable features including a waste water recycling system.
WINE, SCIENCE AND COMMUNITY
The “Grange Hall” will house three teaching laboratories that enable students to learn about viticulture and enology in working lab environments, as well as experiencing a fully functional sensory lab. Conferences, receptions and meetings that welcome local industry members can take place in the large Meeting Hall, which will also function as a large lecture venue. A full catering kitchen will be available for both student and public events. Support space for students, faculty and visiting professors allows the complex to be a working center for education and industry.
